SALMON SALAD 
1/2 c. black or green olives
1 1/2 c. flaked salmon
1/2 c. diced celery
2 tbsp. lemon juice
1/3 c. mayonnaise
Lettuce
1 boiled egg, quartered
Mayonnaise
Sliced cucumbers
Sliced tomatoes

Cut olives in halves. Combine with salmon, celery, lemon juice and mayonnaise; toss lightly. Mound on four lettuce lined plates. Top each with a quarter of egg and a dollop of mayonnaise. Serve with cucumbers and tomatoes. Makes 4 servings.
