GREEN TOMATO RELISH | |
2 qt. green tomatoes, chopped sm. 1 qt. cucumbers, chopped sm. 2 c. onions, chopped 1 or 2 sweet red peppers, chopped (optional) 1 qt. vinegar 6 c. sugar 1 1/4 c. flour 1 tsp. turmeric 1 tsp. dry mustard 1/2 c. salt In large saucepan, cook tomatoes, cucumbers and onions until hot. Drain and add salt and cook for another 30 minutes on low heat. Drain again, then add remaining ingredients. Cook again on low heat, stirring frequently until mixture starts to boil. Quickly pour into sterile jars and seal. Let cool, then check seal. |
