BAKED SPINACH CASSEROLE 
1 pkg. frozen leaf spinach
1 medium onion, chopped
1 clove garlic
1 rib celery, chopped
1 large egg
3/4 c. sour cream
seasoning, to taste
seasoned bread crumbs, optional

Spray a medium casserole dish with Pam. Sauté onion, garlic and celery in butter. Do not brown. Stir in frozen spinach. Cook until tender. Remove from heat. Stir in sour cream and add beaten egg and seasonings. Place in casserole. Sprinkle with seasoned bread crumbs, if desired.

Bake at 350°F until set, about 30 minutes.
