CAJUN CAKE 
2 c. flour
1/4 tsp. salt
1 1/2 c. sugar
1 1/2 tsp. baking soda
2 eggs
1 lg. can crushed pineapple

Mix all ingredients together and pour into well greased and floured 9 x 13 inch baking pan. Bake at 300 degrees for 35-40 minutes.

ICING:

Combine 1 stick butter, 1 cup sugar and 1 small can evaporated milk. Boil 5-6 minutes. Remove from heat. Add 1 cup coconut, 1 cup pecans and 1 teaspoon vanilla. Pour over hot cake in cake pan. Cool before serving.
