CABBAGE PATCH CASSEROLE 
1 cabbage
Boiling water
1 med. onion, minced
1/2 lb. ground beef
1/2 lb. ground pork
1 c. long grain white rice
1 egg
1 tsp. salt
1 tbsp. chopped parsley
1 tsp. chopped mint leaves (optional)
8 oz. can tomato paste
1/2 tsp. salt
1 c. boiling water (may need a little more)

Remove core of cabbage and place (core side down) in boiling water. Let stand 5-10 minutes. Remove and drain thoroughly. Remove coarse vein from each leaf. Mince onion. Mix onion with beef, pork, rice, egg, salt and parsley.

Line bottom of large casserole dish with cabbage leaves. Cover with 1/3 of the meat and rice mixture. Alternate layers of cabbage and meat, ending with cabbage. Pour tomato paste mixed with water over top. Bake 1 hour to 1 1/2 hours at 350 degrees. 4-6 servings.
