SALMON PIE 
1 stick butter
1 med. onion
2 c. leftover mashed potatoes
1 pt. home-canned salmon
1 sm. jar pimento
Double pie crust for 9 inch pie

Melt butter over low heat. Saute cut up onion; add potatoes, salmon, including juice and drained pimento. Mix thoroughly together. Then place in pie crust. Bake at 375 to 400 degree oven until crust is golden brown. Serve hot. Serves 6 to 8.
