COAL MINER'S PIE 
1 lb. ground beef
1 (15 oz.) can tomato sauce
1 c. whole kernel corn, drained
1 1/4 tsp. salt
2 eggs
1/2 c. buttermilk
1 tbsp. flour
2 med. onions, chopped (1 c.)
2 med. green peppers, chopped
1-2 tbsp. chili powder
1 tsp. black pepper
1 tbsp. shortening
3/4 c. yellow cornmeal
1 tsp. baking soda

Preheat oven to 350 degrees. Brown beef, onions and green peppers until lightly brown. Stir in tomato sauce, corn, chili powder, salt and pepper. Bring to boil and lower heat. Cover and simmer 15 minutes. Pour meat mix in greased 10 inch deep-dish pie plate.

Beat eggs, shortening and buttermilk in small bowl 1 minute. Beat in cornmeal, flour and soda until blended. Spoon over meat spreading evenly to cover entire surface. Bake for 20 minutes. Note: Sometimes I top it with cheddar cheese.
