HOT PEPPER JELLY 
8 sweet peppers
10 hot peppers
3/4 c. vinegar
1 box powdered fruit pectin
3 1/2 c. sugar
Green food coloring

Cut open peppers, discard seeds and membrane. Put peppers through food chopper using medium blade. Drain and discard half of juice. Measure 2 cup peppers with the remaining juice into large saucepan. Stir in vinegar. Add pectin and bring to a hard boil, stirring constantly.

Add sugar all at once and bring to a hard boil. Stirring constantly, let boil for 1 minute. Remove from heat, stir and skim off foam. Green food coloring can be added, if desired. ladle into hot sterilized jars and seal. Makes 4 (1/2 pint) jars.
