HOT PEPPER JELLY 
1/2 c. vinegar and 1 1/4 c. vinegar
1 med. green pepper
1/3 c. crushed red pepper
5 c. sugar
1 bottle Certa (= 2 foil packets or 1 box)
Red food coloring

Soak crushed red pepper seeds in vinegar for short time (makes seeds heavier).

In blender, combine 1/2 cup vinegar, 1 medium green pepper, 1/3 cup crushed red pepper. Blend until fine.

In saucepan bring to boil while stirring, 5 cups sugar and 1 1/4 cups vinegar. When sugar is dissolved, add pepper mixture. Cook 5 minutes. Remove from heat. Add Certa and some red food coloring. Pour into small sterilized jelly jars quickly (sets fast). Serve with cream cheese on crackers.
