ROLLED OATS | |
1/2 tsp. salt Scant 2 tsp. baking powder Scant 1/4 c. white sugar 2 1/4 c. oatmeal (pulverized, uncooked) 3 tbsp. butter, melted 1/2 c. milk (lukewarm) 1 egg, beaten Pulverize 2 1/4 cups oatmeal in blender or food chopper until it looks like coarsely ground flour. Measure in salt, baking powder, sugar into medium-sized bowl. Mix well with oats. Grease muffin tins. Preheat oven to 425 degrees. In small saucepan, heat milk and butter until lukewarm. Combine warm liquid with beaten egg and stir quickly into dry ingredients. (Don't over mix.) Mix until only slightly blended. Divide into 6 muffin cups. Bake 20 to 25 minutes. Check with toothpick for doneness. Serve with butter or honey while warm. Nutritious and delicious! Makes 6 medium-sized muffins. |
