GRANNY'S SADDLE BAG FRIED
CORNMEAL PATTIES
 
These were my favorite things to eat when growing up, and my children and grandchildren have eaten them faster than I could turn them out. My Grandma made these for Grandpa to take out in his saddle bags when he was working the cows and they will keep well due to the simple ingredients. These were a staple in the early 1900's, and they were called corn dodgers, though there are many imitation recipes floating around, the original recipe called for leftover "corn meal mush", Remember their motto, "waste not, want not!" - So many of our family favorites began with the need to use what they had, and some delicious results were created! I often make the dough up and shape it in a loaf pan, then refrigerate until needed, and according to my grown "kids" these are ALWAYS NEEDED! Just slice and fry!! "Come and Get It!!"

2 cups plain yellow corn meal
1 tsp. salt
2 to 4 cups BOILING water

Mix corn meal and salt together in bowl; Pour BOILING water over, while stirring, to make a thick "dough". Let cool slightly.

Wet hands with water, and shape into 3-inch rounds (leaving finger print grooves on each side!)

Keep hands wet to keep from sticking. Fry in oil to a golden brown.

Note: Granny used lard, I use Crisco. Lard is best.
