FIESTA CASSEROLE 
1 lb. ground chuck
1 sm. onion, diced
1 green pepper, diced
2 cans refried beans
Black olives, sliced (optional)
1 can Campbell's nacho cheese soup
1 sm. pkg. mozzarella cheese, grated
Taco sauce or salsa
Sour cream
Nacho chips

Brown and drain the ground chuck. Add onions and green pepper. Spray a casserole dish with Pam. Spread the beans in the bottom of the dish. Add the meat mixture and black olives. Pour the soup over top and cover with a layer of grated mozzarella cheese.

Bake at 350°F for 20-25 minutes. Spread the top with taco sauce or salsa and add dollops of sour cream. Scoop out with nacho chips for a great Mexican snack!
