EGG CASSEROLE | |
1 lb. bacon, cooked & crumbled 1/4 c. green onions 3 tbsp. butter 1 doz. eggs, beaten 1 (4 oz.) can sliced mushrooms 1/4 tsp. salt 1/8 tsp. black pepper SAUCE: 2 tbsp. butter 2 1/2 tbsp. flour 2 c. milk 1 c. grated sharp cheese 1/4 tsp. salt 1/8 tsp. pepper Prepare sauce. Set aside. Melt butter over medium heat. Add flour and let bubble 1 minute. Remove from heat, stir in milk. Return to heat and stir until thick. Add cheese and spice until cheese melts. Saute' onions in butter. Add eggs and scramble until soft. Remove from heat. Add mushrooms, salt and pepper; fold in cheese sauce and bacon. Spoon into greased 9 x 13 inch baking dish. Bake at 350 degrees for 30 minutes. |
