HERB CARROTS 
1 1/2 lbs. carrots, cut lengthwise into eighths
3 tbsp. water
3 tbsp. melted butter
2 tsp. sugar
1/2 tsp. salt
Dash of pepper
2 tsp. minced parsley
1/4 tsp. dried tarragon, crushed or 1/2 tsp. fresh tarragon, minced

Arrange carrot strips in greased 1 1/2 quart casserole. Add water. Combine butter, sugar, salt and pepper and pour over carrots. Cover and bake in 350 degree oven for 1 hour. When ready to serve, toss with parsley and tarragon.
