C.'S CARROT CAKE 
1 1/2 c. salad oil
2 c. sugar
4 eggs
2 tsp. baking powder
2 tsp. baking soda
1 tsp. vanilla
2 tsp. cinnamon
2 c. flour
3 c. grated carrots
1/2 tsp. salt
1 c. pecan pieces

Blend oil and sugar. Add eggs. Sift flour and all other dry ingredients and add to first mixture. Add carrots, vanilla and pecans. Bake in 9x13x2 pan at 350 degrees about 45 minutes.

FROSTING:

1 lb. box powdered sugar
1 lg. (8 oz.) cream cheese
1/4 c. milk
2 tsp. vanilla
1/2 stick butter

Mix together. Put on cooled cake. Keep refrigerated.
