COCONUT PINEAPPLE PIE 
3 eggs
1/4 c. plus 2 tbsp. butter, melted
1 1/2 c. sugar
3 tbsp. flour
1 c. crushed pineapple, drained
1 c. flaked coconut
1 (9 inch) pie shell, unbaked

Beat eggs until thick and lemon colored. Stir in next 5 ingredients. Pour into pie shell and bake at 350 degrees until filling is set (about 50 minutes).
