COCONUT - PINEAPPLE PIE | |
3 eggs 1/4 c. plus 2 tbsp. butter, melted 1 1/2 c. sugar 1 c. flaked coconut 3 tbsp. all-purpose flour 1 (15 1/4 oz.) can crushed pineapple, drained 1 unbaked 9-inch deep dish pastry shell Beat eggs at medium speed of an electric mixer until thick and lemon colored. Add butter and next 4 ingredients; mix well. Pour into pastry shell. Bake at 350 degrees for 50 minutes or until filling is set. Yield: one 9-inch pie. |
