RICE SALAD 
Cook:

1 c. UNCLE BEN'S® rice

In:

2 c. chicken stock

Immediately toss with:

1/2 c. Italian dressing

Cool.

Chop and add any or all of the following:

Green onion
Black olives
Pickle
Boiled eggs
Cucumber
Any fresh vegetable desired
Celery
Pimentos
Tomatoes
Green pepper
Shredded carrot

Mix:

1 c. mayonnaise
1/4 c. mustard

Toss all above together. Chill.

This is a nice break from potato salad. I alternate this and Donna's Linguine Salad with potato salad in the summer. It is also great for potlucks!

I started making this salad when I worked at Hotel Lembke in Valpo. The building is no longer around but several of their recipes are!
