FARMHOUSE CARROT CAKE 
2 1/4 c. all purpose flour
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1 1/2 tsp. baking soda
1 tsp. salt
4 eggs
2 c. sugar
1 1/2 c. grated carrots (about 3 lg.)
1 1/2 c. oil
1 c. chopped nuts
1 c. raisins

Mix flour, spices, soda and salt. Set aside. In a large bowl of mixer beat egg with sugar until fluffy and lemon colored. Add carrots and oil; mix well. Add flour mixture and stir to mix well. Pour into a greased and floured 9"x13"x2" pan. Bake in a preheated 350 degree oven for 45 minutes or until pick inserted in center comes out clean. Cool in pan on a rack. Spread with frosting.

CREAM CHEESE FROSTING: Beat together 1 (3 oz.) package softened cream cheese and 1/4 cup softened butter. Add 2 1/4 cups sifted powdered sugar and a teaspoon of grated lemon or orange peel. Beat until smooth.
