CARROT CAKE | |
3 eggs, beaten 2 c. grated carrots 1 sm. can crushed pineapple, not drained 3/4 tbsp. salt 1/2 tbsp. cloves 1 tbsp. cinnamon 1/2 tbsp. ginger 1 tbsp. baking soda 2 tbsp. vanilla 3/4 c. coconut 1 c. raisins 1 c. chopped nuts 3/4 c. oil 2 c. flour 2 c. sugar Add all ingredients together and mix well. Pour into greased and floured 10 inch tube pan or Bundt pan. Bake at 350 degrees for 1 hour or until tests done. FROSTING: 3 oz. cream cheese, softened 1/2 c. butter, softened 1 tbsp. vanilla 1 lb. powdered sugar Mix all together. Cream and frost cake. |
