FROSTED CARROT CAKE | |
3 c. flour 2 tsp. baking soda 2 tsp. baking powder 2 tsp. cinnamon 1 1/2 tsp. salt 2 c. sugar (may use less) 1 1/2 c. corn oil 4 eggs 2 1/2 c. grated carrots 1/2 c. chopped nuts or raisins FOR FROSTING: 8 oz. cream cheese 4 tbsp. butter 2 tsp. vanilla 1 lb. confectioners' sugar (may use less) 1. Preheat oven to 350. 2. Sift together first 5 ingredients. 3. Mix sugar and oil in a bowl. 4. Beat eggs one at a time into sugar and oil, add flour mixture, carrots and nuts. Put in greased and floured tube pan, and bake 1 hour. 5. To make frosting, cream together cream cheese, butter and vanilla. Add sugar and mix thoroughly. Frost. 6. Enjoy! |
