CARROT CAKE - CREAM CHEESE FROSTING | |
2 c. sugar 1 1/2 c. cooking oil 3 eggs 2 1/4 c flour 2 tsp. salt 2 tsp. baking soda 2 tsp. cinnamon 3 c. coarsely grated raw carrots 1 1/2 c. chopped nuts Combine sugar, oil and eggs. Beat at medium speed 2 minutes. Sift dry ingredients together. Add to oil mixture. Beat slowly 1 minute. Add carrots and nuts. Spread in greased 9 x 13 inch pan. Bake at 300 degrees for 1 hour. Cool and spread with the following frosting. CREAM CHEESE FROSTING: 1 (8 oz.) pkg. cream cheese 1/4 c. butter 2 tsp. vanilla 1 lb. confectioners' sugar 1/2 c. chopped nuts 1/2 c. flaked coconut 1/2 c. ground raisins |
