SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 c. chopped nuts
2 tsp. vanilla
2 c. shredded zucchini
1 c. well drained crushed pineapple
1 1/2 tsp. baking powder
3/4 tsp. nutmeg
1 c. currants or raisins
3 c. flour
1 tsp. salt

Beat eggs, oil, sugar and vanilla until thick and foamy. Stir in zucchini and pineapple. Combine remaining ingredients and stir into first mixture until blended. Bake in greased 9"x5" loaf pan at 350 degrees for 1 hour. Cool 10 minutes, turn onto wire rack to finish cooling.
