CUCUMBER RING SUPREME 
Cucumber, trim layer
1 env. (1 tbsp.) unflavored gelatin
2 tbsp. sugar
2 tbsp. lemon juice
1 (8 oz.) pkg. cubed & softened cream cheese
About 6 med. pared cucumbers
1 c. mayonnaise or salad dressing
3 tbsp. finely chopped onion
1/4 c. snipped parsley

Mix 1/2 envelope (1 1/2 teaspoons) unflavored gelatin, 1 tablespoon sugar, and 1/2 teaspoon salt in small saucepan. Add 3/4 cup water; heat and stir until gelatin and sugar are dissolved. Stir in 2 tablespoons lemon juice. Pour into 6 1/2 cup ring mold. Chill until partially set. Over lay thin slices from 1/2 unpared cucumber in bottom of mold. Chill until almost firm.

Meanwhile, mix the remaining unflavored gelatin, sugar and 3/4 teaspoon salt in saucepan. Add 2/3 cup water; stir over low heat until gelatin and sugar are dissolved. Stir in lemon juice. Gradually beat hot gelatin mixture into softened cream cheese with rotary beater until mixture is smooth.

Halve cucumbers and scrape out seeds; grind or shred finely. Measure 2 cups drained ground cucumber and add with remaining ingredients to cream cheese mixture. Pour over almost firm first layer in mold. Chill until firm. Makes 8 servings. Trim center with small cherry tomatoes after unmolding.
