RED CUCUMBER CINNAMON RINGS | |
2 gallons lg. cucumbers (about 15) 2 c. dehydrated lime 8 1/2 qt. water Peel and take out the centers of cucumbers. Put rings in lime water, let stand 24 hours. Drain and wash well in cool water. Pour cold water over rings and let soak for 3 hours. Drain. Add 1 small bottle of red food coloring, 1 cup vinegar, 1 tablespoon alum, add water to cover. Heat and simmer for 2 hours. Drain. SYRUP: 2 c. vinegar 2 c. water 2 pkg. red hot candies (cinnamon) 10 c. sugar 8 sticks cinnamon Bring to boil, pour over rings. Keep lid on tight and let stand overnight. Drain and repeat syrup for 3 mornings. The last morning, heat rings and liquids to boiling point. Pack in jars and seal. This makes 4 to 5 quarts. |
