CINNAMON CUCUMBER RINGS | |
2 gal. cucumbers 8 1/2 qts. cold water 1 sm. bottle red food coloring 2 c. water 8 sticks cinnamon 2 c. dehydrated lime 1 c. cider vinegar 1 tbsp. alum 2 c. vinegar 10 c. sugar 10 oz. red hot candies Peel and make rings (like apple rings) out of cucumbers, use large yellow ones. Soak then for 24 hours in lime and 8 1/2 quarts cold water. Rinse thoroughly and soak for three hours in cold water and then drain. Mix cider vinegar, food coloring, and alum together. Put cucumbers in a pan and add enough water to cover them, then add cider mixture. Heat to a simmer and let set for 3 hours. Then pour liquid off. Mix vinegar, 2 cups of water, sugar, cinnamon sticks, and candies. Bring to a boil. Pour over cucumbers and bring to a boil. Pack in jars and seal. |
