7 lbs. lg. cucumbers, peeled & seeded
Slice cucumbers in 1/8" rings. Soak for 24 hours in 1 cup pickling lime per gallon of water. Drain and rinse. Cover with ice water for 3 hours, then drain.
Mix 2 cups white vinegar, 1 ounces of red food coloring, 1 teaspoon alum and enough water to cover, and simmer for 2 hours. Drain.
Mix 2 cups vinegar, 2 cups water, 7 cups sugar, 8 sticks of cinnamon and a 10 ounce package of Red Hots candy. Pour over the cucumber rings and let stand 24 hours. Drain and reserve liquid. Bring liquid to a boil. Place pickles in jars and pour syrup over them and seal. Crisp and delicious!
