FRESH VEGETABLE PIE 
2 1/2 c. sliced zucchini
1 c. chopped tomatoes
1/2 c. chopped onions
1/4 c. grated Parmesan cheese
1/2 tsp. Italian seasoning
1 1/2 c. milk
3 eggs, beaten
3/4 c. Bisquick mix

Mix vegetables and cheese together. Place in a 9-inch greased pie plate. Beat milk and eggs together. Add Bisquick mix and beat until smooth; pour over vegetables. Bake in 400 degree oven for 40 minutes or until set and golden brown.
