SWEET POTATO BALLS 
6 med. sweet potatoes
1/2 c. butter
1 c. brown sugar
1 c. chopped pecans or walnuts
2 c. crushed cornflakes
12 marshmallows

Boil potatoes, peel and mash. Mix well with butter, sugar and nuts. Form a ball around one large marshmallow, then roll in crushed cornflakes. Just before serving, warm balls in a 350 degree oven about 15 minutes or until marshmallow has softened or melted. These balls may be made ahead of time and refrigerated or frozen for later use. Makes 12 balls.
