RAISIN OATMEAL COOKIES 
1 c. flour, sifted
1/2 tsp. baking soda
1 tsp. salt
1 1/2 c. quick-cooking oatmeal (not instant)
2 egg whites, slightly beaten
1/4 tsp. cinnamon
1 c. brown sugar
1/3 c. oil
1/2 c. skim milk
1 tsp. vanilla
1 c. seedless raisins

Preheat oven to 375 degrees. Sift together flour, baking soda, salt and cinnamon. Stir in oats. Combine egg whites, brown sugar, oil, milk, vanilla, and raisins and add to flour mixture. Mix well. Drop batter a teaspoon at a time onto an oiled cookie sheet. Bake 12-15 minutes, depending on texture desired. Shorter baking results in a chewy soft cookie, the longer time a crisp one. About 3 dozen.
