SQUASH CASSEROLE 
2 c. drained and cooked squash
2 med. carrots, grated coarsely
1 can cream of chicken soup
1 onion, chopped fine
1 sm. jar pimentos, chopped
1/2 pt. sour cream
1 stick butter
1 pkg. Pepperidge Farm dressing (not cornbread)
Grated cheese

Mix all ingredients, except butter and dressing. Melt butter and pour over dressing mix. Line casserole with 3/4 of dressing. Pour in squash mixture and sprinkle top with remaining dressing. Top with grated cheese. Bake at 350 degrees for 45 minutes. Serves 8 to 10.
