CORN CHOWDER | |
3 oz. salt pork, cubed 1 lg. onion, chopped 1 rib celery, chopped 1 1/2 c. potatoes, diced 2 c. canned chicken broth 2 c. creamed style corn 2 c. milk 1/4 c. butter Salt and pepper to taste Fry pork until brown. Add onion and cook over medium heat 5 minutes, stirring often. Do not drain. Add celery, potatoes, chicken soup and 1 cup water and cook until potatoes are done, about 10 minutes. Add corn and heat 5 minutes, stirring occasionally. Heat milk and butter. Add to soup. Salt and pepper to taste and serve hot. Serves 6. |
