4 boneless chicken breast halves 1/4 lb. butter (room temperature) 2 tsp. minced parsley 1 clove minced garlic 1/2 tsp. salt Dash of pepper 1/2 tsp. oregano 1 tbsp. chives, chopped Flour Egg Bread crumbs Pound chicken with meat mallet until thin. Combine butter, parsley, garlic, salt, pepper, oregano and chives in bowl. Place on plastic wrap and form in rectangle. Cover and freeze. When frozen firmly, cut into 4 equal parts and place in center of chicken breast. Wrap chicken around butter covering completely and secure with toothpicks. Coat in flour, then beaten egg, then bread crumbs coating well. Repeat in flour, egg and bread crumbs. Deep fry in fryer such as Fry Daddy or 7-8 minutes until deep golden brown. |
