CHICKEN KIEV 
1 1/2 lb. chicken breasts, pounded flat
1 stick butter
2 eggs, beaten
1 1/2 c. bread crumbs or stuffing mix
Dried parsley or chives

Slice chicken into 1-inch wide strips, rinse and pat dry. Cream butter with parsley; may substitute chives, if desired. Dip chicken into egg, then roll in bread crumbs. Place a pat of herb butter in the center, roll up and secure with a toothpick. Place in a 450 degree oven and bake for 30 minutes or until done.
