MINT LAYER FUDGE 
2 1/4 c. sugar
3/4 c. evaporated milk
1 c. marshmallow creme
1/4 c. butter
1/4 tsp. salt
1 c. semi sweet chocolate chips
1 tsp. vanilla extract
2 tbsp. butter, melted
1 1/2 c. sifted powdered sugar
2 tbsp. evaporated milk
1/4 tsp. peppermint extract
2 drops green food coloring

In a 3 quart heavy saucepan mix sugar, 3/4 cup evaporated milk, marshmallow creme, butter and salt. Cook, stirring constantly over medium heat to an all over boil. Boil and stir 5 minutes. Stir in chocolate chips until completely melted. Add vanilla. Pour in a buttered 8" square baking pan. Let cool.

Meanwhile, prepare mint layer. Stir together 2 tablespoons butter, powdered sugar, 2 tablespoons evaporated milk, peppermint extract and green food coloring. Mix until smooth. Pour over cooled fudge. Refrigerate until firm. Cut into 1" squares.

Makes 64, 1"x1" pieces.
