GOURMET POTATOES 
6 med. potatoes
2 c. shredded cheddar or mild Cracker Barrel cheese
1/4 c. butter
1 1/2 c. sour cream
1/3 c. finely chopped onion
1 tsp. salt
2 tbsp. butter
1/4 tsp. pepper
Paprika

Cook potatoes in skins; cool. Peel and shred coarsely. Put cheese and butter in saucepan; cook over low heat and stir until melted. Remove from heat.

Blend in sour cream, onions, and seasonings. Fold in potatoes and turn into greased 2-quart casserole. Dot with 2 tablespoons butter and paprika. Bake, uncovered, at 350 degrees for 30-40 minutes. Serves 8.
