EASY CHOCOLATE MOUSSE 
1 c. semi-sweet chocolate chips
1 egg
1 tsp. vanilla or 1 tbsp. liqueur
1 c. heavy cream

Pour chocolate chips into a blender. Heat cream in saucepan until bubbles form and pour over chocolate chips. Add egg and vanilla (or liqueur) and blend until smooth. Pour into custard cups or wine glasses and cool. Cover with plastic wrap and store in refrigerator until serving time. Top with whipped cream and grated chocolate if desired. Great for company and you can make it ahead.
