ARTICHOKE NIBBLES 
2 (6 oz.) jars marinated artichoke hearts
1 sm. onion, finely chopped
1 clove garlic, minced
4 eggs, lightly beaten
1/4 c. dry bread crumbs
1/2 lb. sharp cheese, shredded
1/4 tsp. salt
1/8 tsp. each pepper, oregano, and Tabasco sauce
2 tbsp. minced fresh parsley

Preheat oven to 325 degrees.

Drain artichokes and chop, reserving marinade from 1 jar. Saute onion and garlic in reserved marinade. Combine all ingredients and mix thoroughly. Pour into greased 7 x 11 inch baking pan. Bake for 30 minutes or until set. (Can be frozen at this point, reheat 10-12 minutes at 325 degrees). Cut into 1 inch squares. Serve hot.
