CARROT PINEAPPLE MUFFINS | |
1 1/2 c. flour 1 c. white sugar 1 tsp. baking powder 1 tsp. cinnamon 2 eggs 1 tsp. vanilla 2/3 c. vegetable oil 1 c. grated carrots 1/2 c. crushed pineapple & juice 1. Sift dry ingredients into bowl. 2. Beat together eggs, vanilla and oil. 3. Add to flour mixture. 4. Add carrots, pineapple and juice; mix well. 5. Fill muffin cups and bake at 400 degrees for 20 minutes. 12 large muffins. |
