CARROT PINEAPPLE MUFFINS 
2 c. sugar
1 1/2 c. oil
3 eggs
2 c. grated carrots
1 (8 oz.) can crushed pineapple
1 tsp. salt
1 tsp. baking soda
3 c. flour
3 tsp. cinnamon
1 c. nuts, chopped
3 tsp. vanilla

Combine sugar, oil, eggs. Add carrots and pineapple. Mix together flour, salt, soda, cinnamon and add to other ingredients and mix well. Add nuts and vanilla. Mix well. Put in prepared muffin pan, and bake for 20 to 25 minutes at 350 degrees.
