1 unbaked pie shell, see below 2 oz. butter 1/2 c. chopped nion 1 c. diced ham 1/2 lb. cheddar cheese 1 tbsp. chopped chives 1 tbsp. chopped pimento 4 eggs 3/4 c. milk 1 tbsp. flour Salt & pepper Dash each of cayenne & nutmeg EASY PIE CRUST: 1 c. unsifted flour 2 tbsp.sugar 1 stick (1/2 c.) butter Combine all ingredients, blend well, press into 9 inch pie plate. You do not have to roll dough out. May be used baked or unbaked. If baked, bake at 350 degrees for 15 minutes. Watch, it burns quickly. Prepare pie shell and fit into 9 inch pie plate. Melt butter and saute onions. In pie shell place ham, onion, grated cheese, pimento, all mixed together. In blender combine eggs, milk, flour, seasonings. Process until smooth, pour into shell. Bake at 400 degrees for 25 to 30 minutes or until knife comes out clean. VARIATIONS: Tuna, mushrooms, Jack cheese, salmon, lemon-pepper, peas, chicken with mild cheese, asparagus. Great way to use leftovers. Serve as appetizer, luncheon dish or as dinner entree. |
