CONFETTI CORNBREAD 
2 eggs
1/4 c. oil
1 1/2 c. milk
1 c. (8 oz.) dairy sour cream
3 c. self-rising cornmeal mix
1 tbsp. sugar
1 c. grated Cheddar cheese
1/2 c. chopped green peppers
1/2 c. diced pimento, drained
2 tbsp. diced jalapeno peppers

Preheat oven to 400 degrees. Grease a 9 x 13 inch pan. Beat eggs in large mixing bowl. Add remaining ingredients in order listed. Blend thoroughly. Pour into prepared pan. Bake 25 to 30 minutes or until golden brown. Good with Mexican food.
