SPICY TOFU 
2 tbsp. oil
1 lb. tofu
2 cloves garlic, minced
1/2 tsp. curry powder
1/2 tsp. dried dillweed
1/4 tsp. turmeric
1/4 tsp. dried basil
1/4 tsp. dried thyme
1/4 tsp. cumin
2 tbsp. soy sauce
1/2 c. grated Parmesan cheese

Heat oil in large skillet over high heat. Add tofu (squeezed dry and crumbled or cubed) and saute 5 minutes. Reduce heat to medium. Add garlic and herbs and spices; stir well a few minutes. Add soy sauce and Parmesan, stir over low heat. Can be combined with rice or other grains and vegetables. Keeps well and can be reheated under broiler.
