NAOMI'S MESQUITE OVEN-COOKED
BEEF RIBS
 
Goes great with any BBQ/picnic accoutrements, especially bean, potato, or tomato-cucumber salad.

1 lb. beef short ribs
3 tbsp. Worcestershire sauce
2 tbsp. Coca-Cola soft drink
1 tsp. apple cider vinegar (to soften meat)
1 tsp. brown sugar
2 tbsp. barbecue seasoning
1 tsp. garlic powder
1 tsp. onion powder
a pinch of chili powder
a pinch of sea salt (or to taste)
black pepper (preferably freshly ground)

Place short ribs bone side down in shallow glass pan while seasoning.

Combine all ingredients (minus Coca-Cola) in pan with short ribs and rub down to deeply marinate meat.

Flip short ribs meat side down, cover with Saran wrap and chill for 20-30 minutes.

Pull ribs out and heat oven to 300°F. Pour Coca-Cola on ribs (if not cooking in same pan, be sure to transfer marinade/liquid mixture to cooking dish.

Cover ribs with foil; Cook ribs in oven for 45 min to 1 hour, depending on oven and altitude.

For crispy skin on ribs, put them under broiler for an additional 10 minutes (watch carefully as the soft drink may make the meat crisp faster).

Per opinion, can season with additional BBQ sauce of choice (my favorite is Sweet Baby Ray's), though ribs will be very well seasoned and al denté.
