HARVEST APPLE CRISP PUDDING 
3 c. peeled and cut tart apples
1 tbsp. lemon juice
1 pkg. (4 serving size) vanilla instant pudding
1 1/2 or 2 c. milk
2/3 c. brown sugar, firmly packed
1/3 c. flour
1/2 c. quick cooking rolled oats
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/3 c. butter

Spread apples in 8 or 9 inch pan. Sprinkle with lemon juice. Prepare the pudding according to package (with 2 cups milk); set aside.

In a small bowl, combine sugar, flour, oats and spices. Cut in butter until mixture is crumbly. Pour pudding over apples. Sprinkle crumb mixture over top. Bake 375 degrees for 30 minutes until top is golden. Cool slightly, then serve topped with cream or Cool Whip.
