APPLE BREAD PUDDING 
10 slices (1/2 loaf) light bread, wheat or white
2 unpeeled apples, sliced very thin
1/2 c. raisins
3 c. skim milk
4 eggs
1 (6 oz.) can frozen apple juice concentrate, thawed, undiluted
2 tsp. vanilla
2 tsp. apple pie spice
1/4 tsp. salt
2 tbsp. honey, optional

Slice the bread into bite-size cubes and layer pieces with apple slices and raisins in a non-stick loaf pan. Beat together milk, eggs, apple juice concentrate, vanilla, pie spice, salt, and honey, if using; pour over bread.

Cover pan with foil and bake 1 1/4 hours in a 300 degree oven. Uncover and raise temperature to 400 degrees. Bake 15-20 minutes longer, just until top is crisp. Serve warm or chilled. Yields 10 servings, 175 calories each. Add 15 calories per serving if honey is used.
