SWEET POTATO BALLS 
2 1/2 c. cooked, mashed sweet potatoes (1 1/2 lb. can)
1/2 tsp. salt
Dash pepper
2 tbsp. butter
1/3 c. honey
1 tbsp. butter
1 c. chopped pecans

Combine mashed sweet potatoes, salt, pepper, 2 tablespoons butter. Chill for 30 minutes. Shape into 8 balls. Heat honey and 1 tablespoon butter, when syrup is hot remove from heat and add potato balls one at a time, coating completely with glaze. Roll each ball in chopped pecans and place in greased shallow baking dish; bake 20 minutes at 350 degrees.
