PINEAPPLE BAKED CHICKEN 
2 1/2-3 lb. cut up chicken
3/4 c. cracker meal
1/3 c. Parmesan cheese
1/3 c. chopped walnuts
6 tbsp. shortening
1 can (8 oz.) pineapple, drained & cut in half
1 egg
3 tbsp. parsley
1/2 tsp. salt
1/4 c. milk

Mix cracker meal, Parmesan cheese, parsley and salt in bowl. Mix egg and milk in separate bowl. Dip chicken in milk and egg. Roll chicken in meal and cheese. Fry in shortening and place in baking dish. Bake in preheated oven at 350 degrees for 45-50 minutes. For the last 10 minutes place pineapple and walnuts on chicken. Brush with drippings and finish baking. Serves 4.
