FRESH APPLE CAKE | |
2 1/2 c. flour 1 tsp. cinnamon 1 tsp. allspice 1 tsp. baking soda 2 c. sugar 1 c. butter 4 eggs 1/2 c. apple cider 3 med. apples (diced without or with skins) 1 c. chopped nuts 1 tsp. vanilla Cream butter, add sugar gradually and eggs one at a time. Fold in the dry ingredients (sift them all together) alternately with cider. Fold in the apples, nuts and vanilla. Use a 10 inch greased tube pan or try smaller loaf pans (3?). Bake at 350 degrees for 90 minutes (shorter time for small pans). Cool in pan for 25 minutes. Slide cake out onto wire rack to finish cooling. Sprinkle with powdered sugar or glaze with your favorite glaze. |
