SWEET POTATO PUDDING 
3 c. cooked, mashed sweet potatoes (better if you use raw sweet potatoes)
1/2 c. half and half
1 c. sugar
2 eggs, well beaten
1 stick butter
1 tsp. vanilla
1 dash of nutmeg

Mix together and pour into casserole dish (lightly greased).

TOPPING:

1/2 c. chopped pecans
1/4 c. flour
1/2 c. brown sugar
2 1/2 tbsp. butter

Melt butter and pour into flour and brown sugar. Mix together and add pecans. Add 2 tablespoons water and mix together. Pour onto top of sweet potato mixture. Bake at 350 degrees for 25 to 30 minutes uncovered until bubbly.
